SUGHIYAN RECIPE IN MALAYALAM | SUKHIYAN RECIPE KERALA STYLE




Sukhiyan-Sugiyan is a very popular and traditional snack served with tea in Kerala, South India. It is super rich in protein as it contains moon beans/cherupayar that is mixed with coconut and jaggery with a crunchy coating.  So here you go for all Sukhiyan-Sugiyan lovers, grab and enjoy!


1 cup of roasted moon beans
1/2 Cup coconut
1/2 Cup jaggery
1 teaspoon cardamom powder
3/4 cup of water
1 cup Maida
1/2 cup of rice flour
Turmeric powder
Salt
1 cup of water

1. Cook moon beans along with 2 cups of water in a pressure cooker. Cook for 3 whistles then remove from heat. Leave to cool.
2. Once moon beans have cooled down, add coconut, jaggery. Mix well
3. Form balls using your hand then place in the chiller for 20 minutes (this will help you keep your rolled balls formed.
4. In a separate bowl, add maida, rice flour, turmeric, salt along with water to form a loose batter.
5. Dip the balls into this batter and place in hot oil for 3-5 minutes or until your Sukhiyan are crispy!
6. Enjoy!
